Help with custimizable characters

    Ok me and a couple of friends are starting the development of a game. The game is going to be a MMO, so we wanted the main character to be customizable. Now i am doing all the art and 3d graphics and animations. Now my concern is how to make it to where the player can choose things like hair style, shirts, pants, skin color, weight and other such stuff like in gta:sa; now how would I allow the player to do that, and how would i animate it? Would i use one skeleton? How would i accomplish this task?
